I've made white chocolate mousse with Callebaut in the past, and though my mousse didn't turn out as it was supposed to in terms of texture (my fault, I'm sure, not the chocolate's!), the flavor was really sensational. I adore Callebaut chocolate--all varieties, especially dark--and use it for baking frequently. The problem with the mousse is that it was just blah - it said to use raspberry preserves, but I think next time, I would use fresh, pureed raspberries for a brighter taste. And lots more of them too.
